Everything you need to know to make a delicious fried dish
1. Cooking oil issues
– Choose cooking oils that can withstand high temperatures, they will help food cook without the smell of burnt oil. The cooking oils you should use are peanut oil, rapeseed oil, and grape seed oil. Among these three, the most popular and affordable option on the market is rapeseed oil. You may have heard that olive oil is also a cooking oil that can withstand high temperatures; however, it is more expensive than other cooking oils and has its own distinct aroma, so you should not use it for frying.
– Before putting the food in the fryer, sprinkle about 1/4 teaspoon of salt into the pot/pan to minimize oil splattering when you drop the food in.

– Make sure the food is completely dry when you drop it into the fryer. Moisture in the food is one of the main causes of oil splattering when frying.
– Gently pick up the food and place it into the pot/pan. Never drop the food from above.
– Do not be too ambitious by putting too much food in the pan at once. This will significantly reduce the temperature of the cooking oil, causing the food to take longer to cook and absorb more oil, making it greasier and less healthy to eat.
2. What to do with leftover cooking oil?
– Unless you are frying fish or dishes with distinctive aromas, leftover cooking oil can be reused when stir-frying or making other dishes. After the final frying round, immediately turn off the heat, allow the oil to cool completely, and then strain the oil to remove any leftover food debris or batter that may have fallen during the frying process. Note that after frying, you should not reuse the leftover cooking oil for frying again!

– Store leftover cooking oil in a glass jar at room temperature.
3. How to prevent the kitchen/house from smelling like grease after frying?
– Close all bedroom doors if the bedroom connects to the kitchen, then open all kitchen windows to provide ventilation.
– Light scented candles if available.
– Boil a small cinnamon stick or a few bay leaves in a pot of boiling water to release their aroma. The pleasant smell of cinnamon/bay leaves will help eliminate the unpleasant greasy smell in the kitchen.
